Piperade Basquaise

Piperade Basquaise

Pour 4 personnes.

Préparation: 10 minutes. Cuisson: 10 minutes.

Ingrédients :

12 oeufs, 1 poivron vert, 1 poivron rouge, 2 oignons, 2 gousses d'ail, 2 cuillerées à soupe d'huile d'olive, 3 tomates, 40 g de beurre, 1 cuillerée à soupe de persil haché, thym, laurier, sel, poivre.

Préparation :

Eplucher les oignons et l'ail. Ecraser l'ail, émincer finement les oignons ainsi que les poivrons. Oter la peau des tomates et les épépiner. Verser l'huile d'olive dans une sauteuse, y faire suer les oignons, ensuite, ajouter les poivrons, l'ail, le thym et le laurier; saler, poivrer et cuire à couvert sur feu doux 20 minutes. Dans bols différents, casser 6 oeufs, les battre; saler, poivrer puis ajouter le persil haché et un peu de piperade. Faire cuire les 2 omelettes individuellement avec un peu de beurre. Ajouter de la piperade au centre de chacune d'elles. Servir aussitôt avec une salade verte.

Piperade Basquaise, for four persons
Prep time: 10 minutes
Cooking time: 10 minutes
ingredients:
12 eggs; 1 green pepper; 1 red pepper; 2 onions; 2 cloves of garlic; 2 soupspoons of olive oil; three tomatoes; 40 grams of butter; 1 soupspoon of chopped parsley, thyme, bay leaf, salt and pepper (sorry, unclear as to whether it is 1 soupspoon total or 1 soupspoon each - I believe it means 1 soupspoon of chopped parsley, then thyme, bay, and salt and pepper to taste).
Peel the onions and the garlic. Crush the garlic and finely chop the onions and do the same to the peppers. Remove the skin from the tomatoes and chop them. Put the olive oil in a saute pan and put in the onions. Then add the peppers, garlic, thyme, bay, salt and pepper and cover pan and cook for 20 minutes at a low flame.

In a separate bowl beat the eggs, add salt & pepper and add the chopped parsley and a little of the cooked pepper & onion mixture (the piperade). Now make two omeletes with a little butter. Place the piperade in the center of the cooked omelets and serve immediately with a green salad.
