in a skillet or wok, heat some oil. fry the garlic uintil it has just started to turn brown, and then add water to fill the rest of the container. add the parsley, soy sauce, and pepper and bring to a boil. when the water is boiling, add the egg, and then reduce heat slightly. boil for about five minutes more, or until the egg is thoroughly cooked....

I'd agree that soy sauce is not a classical Basque food ingredient. In fact everything related with soy is exotic here.

However a lot of innovation has happened (often for good) in Basque cuisine in the last decades.

I have never tried this particular recipe for garlic soup. The one I always use does not call for soy sauce. I use chicken broth and I sliver the garlic lengthwise into about 6-8 slices. I also add cubed, day-old bread. My kids love this soup; when they were little they would always call it 'bread soup'.

Hi, I was wondering if the garlic is cooked as whole cloves or chopped - can anyone help?
Thanks
